Other than the crows?I know we don't see any other animals which are not really real animals to begin with.

Bu it's fun to speculate.

Oh i also forgot that i also hear the sound of crickets at the lobby campfire.So we already have 2 animals.

Crows, which are confirmed to be watchers for the Entity.

Maurice, Clown's horse "blessed" by the Entity with a third eye as he was blind.

Maggots, flies, and roaches feasting on various corpses and refuse.

Dead cows on Coldwind.

Dead pigs on The Game.

Live vultures in the Grave of Glenvale.

Rats in the hooks on Hawkins.

Last but most certainly not least, Demogorgon.

The Entity sure seems to like carnivorous birds and insects.
