I don't have friends to confirm this, but does medkit add-on syringe get cancelled when you get hit? If you used it to yourself while injured, but then get hit to dying state. Does it still heal you up to injured back again?

It cancels if your health state changes before the heal is completed.
In your example, you would remain in the dying state.

Syringe cancels after using it if survivor is hit before the 16 seconds to a fully healed health state are up. If you are hit after using it and haven’t fully healed, you’ll be placed into the dying state & the syringe deactivates.
It won’t then pick you up 1 state from dying.
