Honestly though, I doubt you will find a popular streamer using that style, because immersed is a very boring playstyle to watch

While I don't personally agree with many of his opinions or know if he's an actual DbD streamer (and not just a content creator), Pain Reliever on YouTube is a self-proclaimed stealth-oriented survivor. He might be in the vein of what you're looking for.

If you're talking about stealth, Yerv often "plays like a rat", as he calls it.

i cant imagine many of them existing, hiding/crouching around is boring to play, unbearable to watch

Ohmwrecker is immersive. No talking to chat when he plays. He's super immersed.

If you mean survivors then PainReliever is the main one that comes to mind who prides himself on that playstyle and playing blendette. He usually has insight and running commentary on his own matches and is very soft spoken and calm guy to listen to while watching - highly recommend if that's your thing
