Has stunning killers with pallets been harder lately, or is it just me?
I feel like I somehow never manage to stun killers with pallets, but when I play killer I feel like I'm getting stunned when I'm not quite close enough to get stunned. Makes me think my timing is just off, but I wanna see what others think too.

I seem to be getting errors with pulling pallets down a lot lately. I’ll be standing right next to them in the area where I can push the to pull them down, and it just doesn’t work. I’ve checked afterward when I thought about it and none of the killers were running the perk (Dragon’s Grip I think?) that holds them in place.

Just run Flip-Flop and Power Struggle like I just did.

I never get slugged when it would actually benefit me (like when I’m running Unbreakable).

I think you mean Blood Favor
Dragon's Grip is a Gen Perk (killer has to kick the Gen to activate it)

The corners seem to have an extended hitbox. Facing the pallet headon feels normal.

At first I thought I thought was a Nemesis bug considering he’s so big but I also encountered this with Doctor and Nemesis is only really tall, not wide.

Stunning killers has been rather easy since they made the changes to fix the issue where killers were not getting stunned when swinging at pallets; they seem to have made the stun occur earlier in the pallet animation, and I also feel like get hit by it from much farther away. I am on console though so with all of the issues since the RE chapter nothing in this game is easy to do.
I will say a lot of killers will avoid the stun if possible, unless they are running enduring, so try to gauge how the killer you are playing against plays in order to know when to drop pallets.

In my experience a lot of killers will try to respect the pallet if they think you are going to drop it, which since we've reached a point where you need to predrop against a lot of killers to avoid a hit that happens a lot. You will especially see this if the killer has a pallet breaking power (Billy, Bubba, Demo, etc.). It might seem harder to land the stun cause killers are just overly cautious sometimes.

I find that Killer also tend to skip pallets alot, making Any mean has alot of room to use

You aren't alone. That can happen for vaults as well. It's not a new problem but it comes in bunches. Several seconds of hoping it will work hitting the button progressively harder and faster with the prompt on screen and nobody blocking. Then you get camped at 5 gens . . .
Great entity screwed me then killer screws me. Maybe a flash of hope when someone unhooks with killer approaching but they want to tunnel me and I don't have borrowed time to help. Enough to make a person not want to play

The latency has been getting much worse. If someone has 50 ping against your 60, you aren't stunning them but they can stun you from miles away.

I typically get the stun but, get hit as well.

Well as killer it certainly dont feel consistent like sometimes ill get stunned when I'm a football fields distance away while other times ill be kissing the pallet when its dropped and nothing happens.

I usually respect the pallet unless I think I can get a trade and still get stunned even when waiting and taking a step back once I see the animation.
