can someone help me understand?
When I play cross-play and meet PC players, a strange thing often happens: I run and look at them, waiting for the moment to turn around to avoid the hit. when the shot goes in one direction, I turn to the other and the killer's shot does not go in the direction it started, but turns towards me. I don't understand how this is possible!

It's possible they flick their shot. When someone tries to 360 me when I'm basic attacking I have to pretty much throw my mouse across the desk to curve or flick my shot to hit them.

Yup. PC master race trumps 360s.
NEVER try to 360 a PC player unless it's a last resort tactic. If they're a competent player, they'll just turn around and smack you in the butt.

I've only played killer a couple times on console but I think if your sensitivity is high enough you can do the same sort of curve/flick shot on console as well

A mouse is a much more precise method of control over a camera than a joy stick, especially because a lot of people on joy sticks use lower sensitivity.
Look at it this way you are limited in how fast your camera can move by however quick it moves when the joystick is pressed as far as possible.
With a mouse however, moving the mouse moves the camera. You want move camera faster? Move the mouse faster. Want to move the camera really far? Move the mouse really far. Unlike a joystick the upper limits for these is determined by how fast you can move you arm and desk space. Sensitivity acts as a multiplier making it so you don't need to move your mouse as far or as fast for the same reault.
