Are there two versions of blight or is that blighted skin tomb video not cannon?

Doesn't the Blighted Blight skin have a description that says this is what happened to Blight after injecting even more of that yellow stuff within him?
That someone was probably Blight, but then again I haven't seen this video.

This link should start at 4:06 or something, the last one

Oh, I remember this. Yeah, that's not someone else, that's Talbot Grimes AKA Blight.
I don't think he ever became a human again either. Maybe someone else can explain this, because these cutscenes seem contradictory to me too tbh. We already have the cutscene of Grimes becoming default skin Blight, which should be how he ended up in this state, but this cutscene almost seems like a retconned version of that transformation.

maybe the entity can create multiple iterations of killers within the realm or maybe time works differently in the entitie's realm

I always thought there are multiple versions of multiple killers from multiple realities. I mean the Tomes mention 2-3 different versions of Haddie before she even came to the game, each with their own story and reality.

Very interesting for sure! Can you tell me where Haddie was mentioned please?

While I cannot direct you to the exact Tomes mentioned (as I swapped to PC and I have to redo all the Tomes to see all the lore stuff again, if cross-progression was on I would be able to just tell you instantly), I believe that Questioned Turkey and Pixel Bush made videos on Haddie's lore and would provide a better understanding since they break things down. It also provides insight into the DbD universe (or multiverse in this case?).

i'd like to say skins are canon when it's necessary, what they ultimately mean by that is "no Dwight doesn't actually wear toilet paper in the realm" but blighted skins are a heavy part of the lore, he experimented on every killer and injected them right?

I think there's a thing about skins and their flavour texts not being cannon.

Honestly, I take those skins as canon. It's kinda like the people having pajamas. I kinda assume that whatever outfit they were taken into the fog is what their canon is, but I guess they could get taken in any outfit. XD
