As interesting at it would be, I don't see it happening. A mounted killer would most likely require massive, open maps, and their movement speed would be ludicrous compared to survivors. Imagine a map 1&1/2 times the size of Cornfield, with a coked out Billy sprinting about like a lunatic.
Plus, how the hell would you stun a horse with a pallate!?
