@RSB "In Algonquian folklore, the wendigo or windigo is a mythical man-eating monster or evil spirit native to the northern forests of the Atlantic Coast and Great Lakes Region of both the United States and Canada.[1] The wendigo may appear as a monster with some characteristics of a human or as a spirit who has possessed a human being and made them become monstrous. It is historically associated with murder, insatiable greed, and the cultural taboos against such behaviours." (Wikipedia)
Delirious, she thought of home; she thought of the elders. With her dying breath, she etched the symbols they had taught her into the floor using what remained of her fingers. Almost in response, a dark hunger stirred inside her. It yearned for blood. In oath, she chose vengeance. (Hag's Lore)
The Hag may not look like a Wendigo from Until Dawn.. but she definitely is a Wendigo.
EDIT: And if she isn't a Wendigo, she's definitely inspired by it.

I rather had the Wnedigo from "Pet Semetary" in my mind, I've never played Until Dawn. Also it is an native american myth, and the Hag does not look like a character from native american myth in my opinion.
