What's the best way to counter a huntress?
Recently I've been losing chases pretty quick against a huntress, I would like some suggestions if anyone volunteers :)

You can loop her in areas that make her either have to commit to a standard M1 chase, or make very difficult hatchet throws. If you aren't that good at looping you can just hold W and look behind you as you do, and predict where she is going to throw the hatchet.
Also drop pallets early against her, since she can literally just throw over them. You can also window fake to make her miss a hatchet.

The simplest thing you can do is just loop pallets/structures and never drop them. She'll be forced to M1 you due to her hatchet wind up making her lose a lot of time in the loops, especially if she raises her hatched expecting a drop/vault and you'll just run.
If you want it more advanced, include thinking into the mix and make correct predictions on when she'll go for the throw and when she just walks through and go for well timed pallet stuns. There's a lot you can do, so this is just some basics.

The best advice I could give you is to play a couple rounds with her, get a feel for how long it takes to wind up and throw a hatchet.
Beyond that, stick to tall loops that she can't throw over, and be greedy with it. Often times a Huntress will raise a hatchet at the pallet hoping that you'll drop it so they can get an easy hit over it. If you kept running, they'll have to put the hatchet away and catch back up again, giving you loads of extra loops. Eventually they'll stop trying and go for a normal attack, in which case you'll want to predict when they're going to switch it up and go for the stun.
Alternatively, if you're not going to be able to make it around the corner in time, you may want to switch which side of you pallet you're running around. They'll usually be winding up ahead of time without being able to see you, so that momentary hesitation can often be enough.
Mostly importantly, just be unpredictable. Move side to side a bit when you know you can't break LOS in time, randomly decide to commit to one direction (even if it leaves you running into a wall, it can be unexpected and cause them to miss). Sometimes even pretending to dodge and then continuing to run straight will throw off a good Huntress.
This bit's more advanced, but keep in mind that the direction you're running a loop matters. Here's a crude example to show you what I mean.
Say the blue thing is a pallet, and the red line shows the direction you're running.
A: From the moment she rounds the corner, she has clear line of sight on you as you run straight towards the pallet.
B: Once you round the corner, she doesn't know where you are. You can be sitting at the pallet waiting for the stun, you could have run straight, or you could have switched and started running the other side of the loop.
(Neither is 100% unplayable, but B leaves you with more options.)

she's slow as #########, literally keep running around a big rock or log (like in the swamp), and thanks to her slowness/badly shaped hitboxes you will waste 30 seconds.

adding to what peanits said, if she is in your face and you are caught out, run back in forth right in front of her, the FOV is easy to play around and is harder to aim when someone is that close spinning

Keep running. She's very mindgameable compared to deathslinger or pyramid head. If she prepare her hatchet and you keep running depending on the tile you can run another loop.

Good Huntress will throw the hatchet to the opposite direction of your head to predict you, so you can kinda mind game that. You can fake turning or just keep running to make her think you're turning.
Also: fake vaulting Windows, fake going to a pallet and turn to the side, don't drop pallets unless you know she won't respect, never vault windows where she will have LoS of you, theres a lot of things but as PeaNUTs says, play with her, its the best way.
Also one important is to keep counting her hatchets, know how many he have and use that in your favor, sometimes Huntress fakes having no hatchets just to get you by surprise.
