So if my characters are all level 50, when the new update comes out, I should have all of my characters at Prestige 3?

No, only if you continued to level them past 50 to accumulate perks.
If you stopped the moment they hit level 50, they're going to remain unprestiged.

So me getting all these teachables was worthless lol

Prestige 1 at best.
Any perks you've unlocked on a character will be credit towards more prestige. Worst case every character you've got at 50 will be someone you can P1 and get all their perks on every character in yellow if they didn't already have it.
