I don't get it..
Why does the game end 2 minutes after starting if someone disconnects, especially if you already go people on hook and injured?

Are you referring to a DC while the trial loads in? If so yeah it can take a few moments for the server to kill the match.

Same reason people on hard drives start moving after I've been on a gen for about 10 seconds, slow servers

On very rare occasions, I've had a DC register a few seconds into the match, but nowhere close to two minutes.

The respective person did not load in at all. But the game failed to realize this until later.
I also had this a few times. E.g. my friend crashed in Loading Screen, the game started and after around 2-3 minutes, it cancels. Happens rarely, but it happens.

I would say that on the rare occasion that does happen its most likely a few contributing factors, The location of the hosted game compared to the person D/Cing, the point at which the person D/Ced (be it at the start of the loading screen or just before the game started) or it could just be the servers being generally trash for that game.
I've only ever had this happen once and its just as i got my first down the game ended and voided.
