What is Having a Main?
Remember back when killer's powers weren't all recycled, and having a main actually meant something about you? The Nurse Mains, the cringy Legion mains (me), the Doctor mains, you could guess something about a person based on who they wanna play, and there was some kinda pride in mastering the skill of your main.
Now it's just... Every killer is some combination of another, what's it mean to have a main anymore?
That or I'm just being a sentimental weirdo as usual.

When have we ever had another killer that can transform into a demon? A killer with a gun? An entity that can shoot sludge grenades? I get what you mean, but each killer truly is unique in some aspect. M1 killers not really, but even they have their own identity.

With your logic you can say that every Killer is the same because they all can hit Survivors with their weapon when you press M1.
With 35 Killers (and many more in the future, since the Devs will probably not change their release schedule), it is bound to happen that there are some overlays here and there. But honestly, Killers are usually really unique, even if they share features. E.g. Billy and Bubba both have a chainsaw, yet they playstyle or way of using it is way different.

This wasnt about Unknown specifically or anything, that was just the timing.
Playing Huntress is totally different from playing Nurse or Trapper even if they both hit you tho. I feel like killers are losing that distinction and we don't need 35 of them.

I think you are over dramatizing the concept of playing a particular killer.
It really says very little about a player if they prefer one type of play over another, outside of the incredibly spurious and subjective narratives we craft in our own heads about what it means.
Having a "main" was just as meaningless before as it is now, outside of our own lil sense of narrative.
Nothing wrong with having that narrative, enjoying it and making it part of your game but like most crafted concepts best not to read to much into it.
Kinda like a horoscope... or Horrorscope perhaps hehe.

Perhaps rhetorical but heres an answer.
I main wraith. One of the weakest killers on the roster. I main him because I like fast paced hit and run plays.
So what's it mean to have a main? It's simply a character you enjoy playing more than the others. Nothing more, nothing less.
That being said, I'm a little weary of your comparing real life to a video game character (other than stupid stereotypes).

Could flip the idea round and say, though it doesnt highlight your playstyle as much, it does highlight your personal tastes.
- In the pool of stealthy killers that try to get into position and time their dashes to mind game around loops, I have options between Pig, Chucky, Wraith.
- In the pool of killers who try to score downs using mind game around locked animations, I have choices between Pyramid Head, Huntress, Xenomorph, Nemesis or Doctor.
- For fast mobile killers who are always hunting and chasing Survivors down quickly I can choose between Nurse, Blight, Wesker, Legion or Spirit.
- For instant down killers holding a strong threat at loops and tiles, I have Bubba, Hillbilly, Ghost Face or Myers.
- For Killers that lay down traps and revolve around pushing survivors into my web I can play Trapper, Skull Merchant, Hag or Singularity.
- If I want map mobility I have choices between Unknown, Dredge, Onryō, Demogorgon, Xenomorph or Freddy.
There are still quite a lot of differences between each killer, and you could consider it even more of a tell to say which killer out of ALL the killers they can pick from in a particular style, it's this one they pick.
It's not that identity is gone perce, more the Venn diagram got more complex.
I tend to play Pig, Myers and Trapper, so I tend to be a stealthier, slower paced and more methodical killer who prizes mind games and catching people by surprise.
