b) try to avoid it by crouching in front of her

Be unpredictable in your routes, take cover near the opposite side of walls and/or obstacles.

Zig zag, her projectiles have a gap between them, so they will partially miss.
If holding W will get you around a corner though do that instead.
In general though, don't get caught out of position in the first place, that rule applies to every killer.

i was talking about playing plague and getting looped around long walls what do you do to hit the survivors

Same thing you would do with just about any other Killer. Turn around, take unpredictable routes, don't bee-line, and ultimately, drop the chase and pressure gens.
Chases really should not last longer than a minute. Around 45 seconds consider dropping the chase and doing something else. There will be an opportunity later

If you don’t have CP you can’t do anything. Drop the chase.

Hold your Purge, get close and unload it into their back. You move at 110 ms when you're holding your puke and a single fully-charged Purge will fully infect them. If they're already fully infected, just chase them normally.

If you don't have corrupt purge you're an M1 killer so you play it the same way we would with, for example, Wraith (running the tile counter clockwise and denying the fast vault)
If you have corrupt purge you can play it like Huntress, Deathslinger or Demo would. You can give them the fast vault because that best sets up your power for what is basically a free hit. Go round the corner charging up your purge like you would charge a hatchet and then puke on them.

Does one full charge actually fully infect a survivor without add-ons? Because I've never been able to. If even a small bit misses it won't get them infected. I prefer to chase normally and then infect them on the hook anyway unless they're one of the last survivors alive.

Yes, it will. Just. However, it's hard to pull off if they're juking.
