What does "esping" mean?
Just played a match with a hacker, but one of the other survivors for some reason said I was "esping" for being good? idk does anyone know what this means?

It just means wall hacks. ESP is psychic stuff, so they said you magically just knew where everyone was by reading their mind. In gaming terms, that normally means wall hacks or indicators of player positions.

Google has told me that esping is basically a hack that lets you see through walls and such. Like you have ESP so you know where everyone and everything is.

ESP = Extra Sensory perception. Originally a term used about paranormal stuff (think "sixth sense", people that claim to see ghosts and so on), but for cheats it's all the cheats that give you information specifically.
The most obvious example is the classic see-through-walls wallhack.

Also, just adding to my previous post, MANY wall hacks for other games are specifically called "ESP". It's just a cheeky way the hack makers decided to label wall hacks. It's a well known thing, so the term "ESP" in gaming has morphed to mean wall hacks.
