On the start screen on DBD, at the bottom, it says that any resemblance of people is coincidental, although Nicolas Cage isn't a resemblance, he's an actual real-life person, is this an overlook? If not, could someone inform me a bit?

I think that saying exists for legal reasons. It is mentioned in most games.
It means for example "Dwight is not intended to be a parody or portrayal of x (known person)." So it protects them from accusations about making fun of a political figure or have them in a violent game without their consent for example by having that statement out there.
