So if surv are just Reskins with no benefit..
Why are the males taller stood or crouched (disadvantage in some areas) also why do some make less noise than others (without use of perks)

I mean it would be weird if everyone literally has the same measurements, no? Blendette should be as fat as Jeff.
About the noise, Either lore friendly that some survivors are that tolerant to paint hence Nancy screams as if she's in an adult video lol or it's to cope with the fact that Ace is tall so he has to make up for it with a nearly built in Iron will, Maybe it's a combination of both who knows.

All survivors are unique in that some may be able to have invisibility powers (Claudette, Adam, Tapp, Jake, Nancy, Kate, Bill), and some are quiet (Quentin, Ace, Dwight, Nea, Meg, Yui). While some are loud or can't blend in (Jeff, Ash, Jane, Laurie, Feng, Steve, David).

In fact there's already a survivor meta, basically claudette. But since the hitboxes are the same, I'm fine.

You can hear meg's grunts of pain on the other side of the map. Nancy and Kate have 0 chances to blend with anything.

I don't hear Meg all that much... But I'm not the best hearer.
Prestige Nancy and Kate tend to blend in well, depending in the map. Kate has outfits to blend if cosmetics count (I don't count them).
