Speaking as someone who has played as Oni and Ghostface many times, they're not particularly easy to get that one hit knockdown. Oni is hard to aim against even a half decent survivor and Ghostface stops building up when they get spotted, and as soon as the survivors know they're facing GF, their head is on a swivel…

I haven't played in awhile, but isn't it only 12 hook stages (3 each survivor)?

This is the reason the only killers I can play are the ones where you can effectively attack around corners (Pinhead, Pyramidhead, the Clown, etc.). I get spun too hard and with my optic neuritis, I struggle to see where people go. Especially when they spin to the left (it's my left optic nerve that's damaged)
