after you earn 3 protection hit score events , mettle of man activates . what is a 'protection hit score event' and how do you do it ?

You have to take a hit within 10 meters of an injured Survivor. For example, if the Killer is carrying a Survivor to the Hook and you take a hit, the hit will register as a protection hit. Bodyblocking for an injured Survivor also counts as a protection hit.
If a hit is registered as a protection hit, you get the Protection Score Event that's being talked about in the Perk's description.

Side-note, if it wasn't obvious than taking a hit for a healthy Survivor doesn't count towards the "protection hit score event".
Learned that the hard way and took a hit with no benefit. You can gain protection hits towards MoM by taking a hit for an injured Survivor or getting hit while the Killler is carrying a Survivor. I believe you can also get a protection hit by getting hit near a hooked Survivor, but i'm not 100% sure if that's actually true, so don't go in expecting that to be the case.
