So how many gens do you need left to spawn hatch with 2 people left

3 gens have to be repaired (2 gens left) so it can spawn when 2 people are alive

Easy way to remember is hatch spawns when the # of gens completed = the # of survivors left + 1.
Also,, since EGC it always spawns when 1 survivor is left.
