When I grab a survivor on a gen, it immediatly let's them go and they run away. Do I have to hold the button down or what?

You're not doing it wrong, that's just something that happens right now.

it's latency, and it really sucks but theres nothing we can do

Latency. Same thing can happen with lockers. I'd just lunge if they're on a gen it's more reliable.
