why dont devs do more Q+A sessions, but make it specific to a certain part of the game?
For example, devs do a Q+A specifically asking for killer questions; then later, say in a couple weeks or something, do the same for survivor, then perks, maps, misc etc. and the burning questions for each can be looked at and addressed. Even if its just 'we are working on it soon' or 'its on our to-do list for this year', hell even 'we aren't looking at that right now, instead we are doing X first'.
(also first post, glad to be able to interact here now instead of lurking around questions and being purely on steam discussions)

Because they want to avoid a dumpster fire.
They've let bugs, glitches, performance issues run for too long and players are agitated.
So they want to avoid the obvious.

Speaking of Q&A's, when is the Q&A session for this patch?

This is most likely the case however this is exactly the reason they need to be more open for discussion.
Aside from staff being put "in the hot seat" on such topics I also think another reason they want to avoid it is due to the amount of toxicity the community has garnered. Sadly due to this issue never being stemmed they would be dealing with lots of "strongly worded rage questions/comments" and "trolls" aplenty...
