Dumb survivors are called meg heads. We found the killer equivalent.
Billy Brain
Because Billy is the dumbest in the lore of all the killers because he basically lived in a box and was treated even worse than a dog. Then he broke out and boom, entity took him.
So he had no education, probably doesn't even know how to speak.
So if you find a really dumb killer, they are a billy brain.

Wouldn't Demo be even less intelligent since he is basically an animal? According to Billy's lore in the tome he at least watched TV when he was locked up, so he had some understanding of the world.

I think Demo would have a large intelligence of being able to hunt. He kills for food and for fun and he is really good at it. So while he might not be able to talk, he is still smart enough to know how to most effectively get his next meal.
Also Billy Brain sounded better.

Demo's surprisingly intelligent given it's efficacy in ambushes in the show so not really

Being able to ambush his prey doesn't make him more intelligent. Lots of animals are good hunters in that way.

Well yes it it does since he's just like many other animals being good at hunting prey. That doesn't make him smarter than Billy.

The killer equivalent could be Hubba Bubba? (I loved the gum as a kid, love the movies with Bubba, so that would be fine. xD)
Because in my opinion, Bubba is not the brightest candle on the cake when we look at the killers like that.

It’s not called Meg Head because Meg is dumb lore-wise. She actually goes to college. (Edit: just for the record, I do think you can go to college and still be dumb, but we don’t have any reason to believe that this can be said about Meg)
it’s about the players that choose to play her. (And I never got that anyway, there is as much dumb Nea players as there are Meg ones..)
with that said, I guess Hillbilly still fits with this mindset.
