help a newbie out, please.
I'm on PC (steam), live in Serbia, so probably Russian servers or something IDK. Had the game since 2018 but have a total of 100h in game (most of that spent in the lobby either AFK or waiting for a game).
Before, I understood the "ranking" system, as in rank 20 - rank 01 going from piss yellow to blood red and it was a mixed bag, sometimes I would actually get survivors who didn't know every pallet, jungle gym, window, they'd be new, like me, so I'd play fair (no NOED, tunneling, slugging, camping etc.) but still manage a 2-3K, and sometimes I'd get flashlight clicking ultra survivors with servers in their back yards dead harding for distance, body blocking, flashlight saving swat agents who de ranked on purpose, it felt random and most of all it felt (sort of) fair.
NOW?! Holly #########, now i don't understand ANYTHING! there is a IV (I know it's 4, i just don't understand it) in the corner of my screen that's kind of yellowish, that's rank but every game, it's the latter version of survivors, and in the endgame they all have different ranks with different colors, blood red I as well as IV... The #########??? I don't expect or want to 4k every time, but I can't seem to "git gud". Survivors just run me around for 5 gens and book it. I don't feel like I'm getting any better :(
I got a 4K ONCE! And only because:
-The swat agents got too cocky and way too altruistic, basically throwing, so not me playing good, but them playing bad (on purpose)
-My reverse bear traps got awesome RNG and just wouldn't come off. Can't count on that.
-AND I had to sweat my ass off, slugging, tunneling, and camping like the biggest most toxic player we all hate, and got a well deserved ear full in the endgame chat.
It feels bad, I don't like playing in ways that make it not fun for the four other people in the game, but it also feels bad when the swat team shows 0 fear, and just steam rolls me, looping like pros linking multiple tiles together, flashlight clicking, sabo plays, body blocking, while gens just keep popping like corn! It just seems hopeless. I keep trying but it just seems no one is just NEW anymore.
What can I do, if anything? :(
(except play survivor, that always goes worse, but I didn't buy the game to play survivor tbh.)

Grades (which replaced ranks) have no correlation with matchmaking as of current. Instead it uses a hidden value which adjusts itself based on kills + escapes.
Functional, I know.
Also, for the record, Europe has 2 servers- Frankfurt (Germany) and London (England). Depending on queue time it's also possible for you to be playing on the Asian server, which is either in Korea, Japan, or both. I don't know the exact location.
The Forums use a profanity filter to ensure discussions remain civil, as excess profanity has "no place" in civil discussion.
Doesn't stop a lot of us, like myself, from cursing but it's there to block it out.

Ranks are no longer relevant and have nothing to do with matchmaking.
Ranks are now called grades and only purpose is the end season rewards.
BHVR implemented Skill Based Match Making (SBMM). It uses a hidden score (MMR) to match you with other players. This MMR goes up/down based on Kills and Escapes.
Each killer has its own MMR and all survivors share the same. Killers you've not played take the average MMR of your other killers.
Right now, the average queue time is very high for survivors. This makes the match making system queue players with a wide MMR margin. That's why you can have one match with really good survivors and have really bad survivors the next.
Play the best you can. You may lose but over time you will get better.

So the Rank system now is purely a measurement of how much a person has played the game in the current season. If you see Red Ranks regardless of number, just means they've played a lot of games this season. The numbers are just subdivisions there are 4 levels in each rank color. The combination of Rank and Level determine what reward you get at the end of the season. Rank resets every season as well so it isn't as good of an indicator of skill as it used to be in the past.
Your issue is probably to do with available players in you region vs SBMM(Skill based Match Making). SBMM will try to put you with players who are around the same MMR value to give you matches to have more balanced matches. If your region doesn't have any players currently online that fit in that narrow criteria then it widens the pool until you just start getting matched with any available players. It means you don't have to wait a super long time for games, but means your chances of getting matched with people who far exceed your skill level is more likely.
You could try changing the times you play to be either earlier or later in the day, but even then if your region is just full of hardcore players then you will probably still get that level of player.

Oh my god, thank you guys for taking the time to write! You explained that excellently, and I'll definitely take all your advice to heart, I'll try with different times of day, and I'll keep playing to make sure the system knows just how bad I am xD
However I will not be moving to a different region, it just seems like too much of a hassle xD

One follow up question, I get (now) how the MMR system works, but is there a way to set my preference to "I'll gladly wait for 20-30 minutes for a GOOD matchup rather than a 5 minute wait for a 7 minute game I get totally wrecked in"?

What everyone else has already said. MMR is was just redressed and it still gives you the same mix-bag of players, but now with delicious blood (..errr points) when it resets. The number of pips you need scales based on how high you are up the ladder, as well as points, but i'm sure someone can confirm that for sure. There is not currently a guaranteed queue time that has been implemented in the game.

Try sticking to 1 killer. So your hidden mmr drops faster, if you lose.
If you continuously switch killers, then it will take far longer to drop your mmr.

To your last point, this game can be very humbling at times because you will have good games where you feel invincible and then you get humbled the next game struggling to get 1 hook... and everyone escaping and tbagging clicky clicky ######### at the end. It's all about balance. You do good, you get humbled....and then maybe you get on your basement Bubba insidious and remind yourself this game can be made unfun for both sides just as easily.

I kind of like pig, but I know she's BAD compared to other killers, can you recommend one for a complete beginner?

Absolutely! Humbling doesn't begin to cover it. And that was my experience before, some you "win" as in FEEL like a scary powerful killer, and sometimes... not so much -.-
but now it's always the latter. I can't get a single kill unless the survivors feel SORRY for me and GIVE me a kill... THAT'S WORSE T_T (but blood points, soo I'll take it xD)
They don't even leave unless they can make you swing at them as they dead hard out, before they waited to give you a hit for the road, a little more blood points, nice of them, but now, they wait for me to swing, and then they DEAD HARD out of the game? O.o What's the point?
Anyhow, I'll try the suggestions you wonderful people gave me, try different times of day and use the same killer (thank you all again so much!) and I'll be sure to give an update when I play more games and see if it helps.
Oh! One more thing, cross play ON or OFF? Its definitely a longer wait with cross play OFF, but I saw somewhere on the forum, that it helps, but I might have misunderstood the post xD

Good choice! He was my first main. Nothing beats the feeling when a survivor drops a pallet in your face, teabags, turns around and steps right into your trap.
