Can't upload a video because it's switch, but the challenge (not just the text) seems bugged.
With the challenge selected, I have used self-care to fully heal myself one time and escape the trial. I only had self-care equipped. But—after doing so twice now—it has not completed for some reason.
I'm restarting the game and trying again (in case it's some other sort of error that just needs a simple restart), so I'll update if I manage to meet the challenge requirements and it completes finally.
EDIT: Nevermind! Restarting fixed it. The next time I finished the challenge, it marked as complete. Not sure what the issue was, but it had nothing to do with the challenge itself.
