Server Selection - Switch

As you all may know already, the Switch version released with dedicated servers already. That's great on one side, because I always get green ping, but worrying on the other, because it's always the same 5 to 6 names. My server doesn't seem to be really populated, and a lot of players that were there the first day, no longer show up.

I'm in South America so I guess I'm logged into the Sao Paulo server. Is there a way to change servers? If the people who are there all the time get bored in 2 or 3 days, I'll no longer be able to play the game. Literally.

@Peanits @MandyTalk @Patricia can you guys provide more info on this?
