Sometimes they hit when they don't look like it, sometimes they miss when they look like they should hit.
Overall, it's due to hit boxes. I'd reccomend watching the stream the devs did on it.

I honestly think they got worse after last patch, in the sense they feel truck-sized now. Obviously, it'd be because of dedi servers, since they didn't change the hitboxes. Might be a false impression.

They might as well visually change them to have aggressive tracking that goes around corners, at least it would match the actual experience. It sometimes feels like they hit if she throws one at where you used to be a few seconds earlier.

Her Hitboxes aren't the problem but dedicated servers are.

their hitboxes are working the way they are supposed to work.
have you seen how the game was when hatchet hitboxes actually matched their playmodel? that was horrible - and gone within a week.
if you want hatchet hitboxes to match their playmodel, survivor hitboxes need to match their playmodel first.

They are also too big. So being too big and having dedicated servers is why there is so many Huntresses. She's literally a free win and I refuse to play against her until the devs fix it.

Few seconds is probably an exaggeration, but thats how the internet works. You walked around the corner, on your screen you are around the corner because your client simulates it. But it takes a bit of time for that information to get sent to the server, which then has to crunch on it, and update your position, granted this all happens in a matter of milliseconds, it can often be enough to make it seem like you got hit around the corner. Because to the server, you weren't around the corner yet.

The one thing that has always made my blood boil about the axe hitbox is that you might be standing right behind a corner with the huntress throwing her axe at your direction, and lord behold, if your feet is even an inch outside the corner, that axe is going to hit you like you were standing in front of it. There are many instances where I have clearly avoided the axe but it seeks me through the corner of the wall.

Do you realize that survivors' hitboxes are bigger than their models, right? You said that as if it would be a nerf, but if they did what you suggest, every survivor and their families would rejoice.

Running a huntress in this game is literally a 50/50 almost half the time unless you get a good survivor map.
- You're behind a wall? Completely and totally? J/k, get hit.
- Dodge a hatchet? Yes, but no. The shockwave from the hatchet hit your invisible body.
The information conveyed by the killer's power is inaccurate, and can leave survivors feeling cheated. This could be fixed with more accurate survivor/hatchet hitboxes. That takes time and effort, plus it's not a cosmetic, so BVHR isn't interested in changing it. Just get used to shockwave anime hatchets, I don't think they're going anywhere, probably because there was no easy copy/paste code for auto-generated, accurate hitboxes in blueprints. : )

Actually, her hitboxes are at least part of the problem, because she throws spheres the diameter of a hatchet. So, it's quite sizeable.

I wish they would change hatchets to huge fireballs that burn through walls so that it would make more sense when they hit you

you do realize that the survivors hitbox has the same height as their standind playmodel and is shaped like a pill that emerges from the middle of their playmodels straight upwards and therefore is not matching the playmodel at all?
that means, for example an injured survivor running will lean quite far forward, though there is no hitbox within that part of his body.
and yes, i said that matching hitboxes would be a nerf - why?
you know what a great benefit of a pill shaped hitbox is? its easy to squeeze around objects without getting stuck.
so what would it mean if survivors had hitboxes that actually fit the character?
well, first off female characters would have an competetive advantage over male characters, due to their playmodels being smaller. that one itself is a no go imo.
and secondly, survivors would not be able to hug walls and turn corners the way they currently do, aswell as getting stuck a lot more often. if you would happily trade your ability to properly loop, just so one out of currently 19 killers requires a bit more aim to be used efficiently, thats great for you. i doubt others would agree here with you though.
