Mori or Spare the last survivor
Right now, if you want to let the last survivor go, you have to give them hatch or gates. On bigger maps, this is kind of awkward. It has its charm of course, but it does waste a lot of time.
How about adding a system where the moment the last survivor is downed, the killer is given a choice: Kill or Spare. Kill would do a mori, but the Spare option would do a little cinematic where you get to see the last survivor exit through hatch or something
It would also prevent bleeding players out, because in the very worst case, the killer closes hatch in the survivors face, then follows them to gate and downs them last second.
Would be nice. It could give some points to both players too. Plus it would prevent people from crawling to a corner to troll and waste time. The downside is you can't carry the survivor to hatch anymore, but honestly, I'm fine with that. You could still give it normally if you prefer that.

I really do not want to watch the same mori animations over and over and over. Maybe if there were more variety.
In any case if you want to let a survivor go you don't have to give hatch. I always wiggle them off and we split up and search for it. If I find it then I just close it and let them get gate. It's way faster than carrying them all over.

Yet you're fine with hooks?

Sure, but this system would be faster and better.
Personally, I'd like the ability to skip the Mori animation and the Sacrifice animation if I'm playing survivor for the very same reason you mentioned. Would save some time every game.

It's weird how you think I said something that I never did. It's like asking why you like pizza so much after you told me you enjoy swimming.

Hook animation is the exact same every time, regardless of killer
Moris are unique to every killer yet you say the moris are stale?
