How to counter the Nurse and her blinks?
I just had my 2nd match as a survivor and we were all noobs but I couldn't get her off my tail. Every time I wiggled out, I got blinked and down I went. I managed to escape because the player let me but I was getting absolutely destroyed throughout the entire game. I could usually lose the killer in my other game because they would have to run at me but the nurse literally just blinked and I was gone. I tried going around corners and God knows I tried using pallets but nope. Nothing seemed to work

You have to use her blinks against her and the nerf that comes with them now.
When she fails to down you with both her blinks, use that as your opportunity to gain some distance. She'll either need to use a blink to get to your, walk to you, or break off the chase entirely afterwards. To "lose her" in a chase, you need to use your environment against her. A good Nurse will adapt to this short-coming, but using objects like rocks, tire stacks, cars, and other such objects will require her to charge her blink for a longer set of time. Sometimes these objects will mess with the distance she can blink as well, so you can use that to your advantage to dodge some hits.
Your best option when facing The Nurse is to use loops and objects against her, using the tips above and the loops around you can help out in a chase. I've already said what you can do with the objects, but with the loops you can try blocking your view from her and use the high walls of certain loops to your advantage. If you're at a loop with low walls than that's a death sentence in my opinion.
That's about it though, there's probably more to it than that, but I personally haven't faced The Nurse in a long time. Neither did I face her before her nerf as well, it was pretty rare to begin with.

Nurse is a really peculiar killer and depending on how skilled the player using her was it can be daunting to face her. Since she can easily outrun you no matter how distant you are, what you need to do is to make sure to be unpredictable with your movements.
You need to use Objects on the maps to put between you and her so she can't see where you are going and she will have to guess the blink position. Just running away in a straight line in open fields makes it extremely easy for a Nurse to hit you.
Pallets are definitely not the main tool to use against her, since you are stuck into an animation when dropping them (leaving you vulnerable to a quick blink), and you need to have really tight and accurate timing to hit her mid blink. To make it worse, a good Nurse will reach you in other ways instead of blinking through a pallet so she doesn't risk getting hit at all.
Using corners and walls is definitely a good way to go, because once a Nurse lose line of Sight she will have to guess her blink. With that being said, a good nurse will be able to predict where you are running and cut you out anyway, so you need to get some extra steps and fake out the directions while she can't see you.
Other tricks that you will see players use (and that you will slowly use too) includes also running towards her when she is charging the blinks, trying to lose the chase during her fatigue time (when she gasps after a blink or two, she will be slowed and she'll be forced to look down on the ground, with an impaired vision too), keeping track of the blink times and recharge time (she can usually blink twice max before getting the fatigue. With an addon she can blink 3 times max. Blinks also need a recharge time of a few seconds).
Feels like an impossible challenge? It definitely looks like it when you are a new player, but with practice you'll be able to understand a lot of this mechanics and will be able to use it at your best. In the meantime don't give up! Try some tricks when you face her, and play with a different mindset. (You will see that you need a different mindset for a lot of different killers, but Nurse definitely requires one of the most different, indeed).
As a final note, my best suggestion is to play her yourself! You'll be able to quickly understand how she works, and if you are lucky/unlucky you'll get some experienced survivors that knows how to counter the Nurse so you'll be able to learn from them directly. If all else fail, you can also check some guides. On youtube you'll be able to find out a lot of guides on how to play as her/against her. Both types of guides will be helpful 👍️
