Hatch
The hatch opened with 2 people alive and 2 gens remaining. No one escaped so it can't been a key. Is it a bug?

actually its possible to find a key in a chest.

It sounds like one of the survivors found a Dull Key or Skeleton Key in a chest somewhere on the map, and then both located the hatch and escaped. The hatch spawns when more generators are done than there are survivors alive, which in this case, 3 gens done and 2 survivors remaining, would be correct. The key would force the survivor using it to jump through, but the hatch would have been left open for the last survivor to jump in behind them.
But from the sound of it, maybe they opened it up and ignored it. The Key keeps the hatch open for 30 seconds.

The OP says quite clearly that no one escaped. If key usage forces user to jump in, there would be at least one survivor, who escaped.

It seems that Plunderers Instinct is base kit now (BUG obviously) so it's way easier to find a key in a chest so it's possible that one of them found it in a chest and lead the other teammate to the hatch and they both escaped

Looking back on the video I saved from the match. I did not kill the last survivor but it said in the end I killed him. I didn't see him the entire match. Super weird. Anyway, I will report it because something weird was happeing.
