50% of the hits Huntress'es get on me are like 2 feet around a corner and my ping is always around 31ms it makes me want to just completely give up on DBD.

I don't think that's a lag issue, so much as that the hatchet has the hitbox size of a refrigerator.
Which, incidentally, also allows it to strike survivors by hitting a solid object in front of them.
